Vegan Chai Pancakes
This unique vegan pancake recipe has the delicious taste of chai tea. 2 cups whole wheat flour 1/2 cups wheat germ 1 t baking power 1 t baking soda 3 T natural sugar 1 1/2 t cinnamon 1 cup strong Chai Tea, cooled (I used Vanilla Rooibos) 1 cup non dairy milk (you could use anything, water, more tea, apple juice) 1 t vanilla extract 1/2 cup apple sauce 1 cup blueberries (fresh or frozen) optional Preheat non-stick griddle to high (or frying pan) until water sprinkled over heated surface bounces. Mix dry ingredients in large bowl. Add wet ingredients and stir until mixed. Fold in berries, if using. Use 1/4 C measure to drop on hot griddle.
